The best chicken in Peri Peri Chilli

4 Whole / 500g Chicken leg pieces (skin on)
1 tsp / 6 g salt (1/2 tsp each side)
1 tsp / 2 g black pepper (1/2 tsp each side)

Peri Peri chilli chicken recipe

For frying the Peri Peri Chicken

• 1 tbsp / 15 ml cooking oil

Peri peri chilli sauce

• 1 medium size onion
• 8 cloves / 8 cloves garlic
• 8 units / 8 units bird’s eye chilies
• 5 units / 5 units mixed peppers
• 1 tsp / 6 g salt
• 1 tsp / 2 g black pepper
• 1 tsp / 4 g brown sugar
• 1 tsp / 2 g oregano
• 1 tsp / ⅛ g mixed herbs
• 1 tsp / 2 g smoked paprika
• 1 tsp / 2 g chili powder
• 1 tbsp / 16 g tomato paste
• 1 tsp / 2 g lemon zest
• 4 tbsp / 60 ml fresh lemon juice
• 4 tbsp / 60 ml white vinegar
• ½ cup / 120 ml vegetable oil
• ¼ cup / 4 g chopped coriander
