How to Grow Hot Chilli Peppers in New Zealand 7 Top Tips
Learn How to Grow Hot Chilli Peppers. It can be highly rewarding, especially with popular varieties such as Jalapeno, Red Scotch Bonnet and Carolina Reaper, and Peri-Peri. These peppers thrive in New Zealand’s diverse climates when provided with proper care and suitable conditions. Hereโs a comprehensive guide to help you successfully cultivate these fiery favourites.
1. Grow Hot Chilli Peppers Indoors During Winter
Begin sowing chilli seeds indoors in winter (JulyโAugust) for an early start. Chilli seeds require constant warmth for successful germination, ideally between 24ยฐC and 32ยฐC, with 28ยฐC being optimal. Place seeds in small pots or seed trays, about 2โ3 seeds per container, using a quality seed-raising mix. Initially, light isn’t crucial, so storing them in a warm spot like a hot water cupboard is fine, but ensure the soil remains moist without becoming waterlogged. Most seeds germinate within 10โ14 days, though hotter varieties such as Bhut Jolokia, Nagas, Scorpions, and Reapers may take up to six weeks.
2. Transplant Hot Chilli Pepper Seedlings Carefully
Once seedlings reach approximately 10โ15 cm tall and develop 2โ4 true leaves (typically after 4โ6 weeks), transplant them into larger pots filled with nutrient-rich soil. Ensure you mix compost, aged manure, or organic fertiliser into the soil to provide essential nutrients. Only transplant outdoors when the risk of frost has completely passed, usually by late September or October. Space plants about 45โ60 cm apart to allow good air circulation.
3. Choose the Right Location (Warm and Sunny)
Hot chillies require plenty of warmth and sunlight. Select a sunny location that receives at least 6โ8 hours of direct sunlight daily. In cooler regions, consider using cloches or greenhouses to maintain optimal temperatures and extend your growing season.

4. Soil Preparation For Hot Chilli Peppers
Use well-draining soil enriched with organic matter such as compost or aged manure. Chillies prefer a slightly acidic to neutral pH (6.0โ7.0). Avoid overly wet conditions, as chillies are susceptible to root rot.
5. Hot Chilli Peppers Watering and Feeding
Keep the soil consistently moist but not soggy, watering at the plant base to minimise the risk of fungal diseases. Feed your chilli plants every 2โ3 weeks during the growing season using a balanced fertiliser to support robust growth and fruit development.
6. Hot Chilli Peppers Support and Pruning
Certain chilli varieties, such as the Carolina Reaper, can grow top-heavy. Provide support using stakes or cages to prevent branches from breaking. Prune lower leaves regularly to enhance airflow and reduce disease risks.
7. Hot Chilli Peppers Pest and Disease Management
Regularly inspect your plants for common pests like aphids and whiteflies. Control infestations promptly using organic insecticidal soaps or neem oil. Good spacing and adequate air circulation will help prevent fungal diseases.
How to Grow Hot Chilli Peppers – Harvesting Tips
Harvest chillies just before they fully ripen. Regular picking encourages the plant to produce more peppers, resulting in a larger overall harvest. Avoid leaving chillies to rot on the plant, as this can negatively impact its health and future yields. Protect plants from frost, especially in colder regions, by bringing them indoors overnight if necessary. With proper care, your chilli plants can continue to produce abundantly for several years.
